Food from the Sea

Year 10 Marine to finish off their unit "Food from the sea" cooked several locally caught fish (Snapper, Mullet, Leather Jacket and Redfish) in the traditional First Nations method of cooking on hot coals up in our Aboriginal garden. John Field graciously volunteered his day to build the fire and let it get down to the hottest of coals. Students learnt how to stuff the fish with native herbs such as Lemon Myrtle, Wattle Seed and Curry Leaves, then wrap in Banana and Gymea Lilly leaves to bake the fish in the hot coals. The delicious fish was devoured by everyone. Big thanks to John who imparted his wisdom and knowledge to help give students this unique experience.
